Southwestern Bruschetta

(Serves 6; serving size: 2 slices)
- 1 long loaf crusty French bread (baguette), cut into 12 slices
- 3 tablespoons olive oil
- 1 ½ tablespoons fresh lime juice
- 1 tablespoon minced cilantro
- ½ cup chopped plum tomatoes
- ½ cup frozen corn, thawed
- ½ cup minced green peppers
- 2 garlic cloves, minced
Preheat the oven to 375 degrees. Brush each slice of bread with the oil, and
toast the bread slices on a cookie sheet in the oven for 5 minutes. Combine the
remaining ingredients in a bowl, and top each slice of bread with the
bruschetta.
