Orange Ambrosia

(Serves 6)

This simple sweet makes a light, refreshing dessert.

  • 7 navel oranges, peeled, separated into sections and with pith removed
  • 1/2 cup, shredded or flaked sweetened coconut

Place 6 oranges in a bowl, reserving 4 sections. Using your hand, squeeze the juice from the reserved sections over the others. Add the coconut, and toss gently. (If the mixture looks dry, squeeze more juice from the remaining orange.)

Refrigerate until ready to serve.
